Ingredients

  • 4 bone-in pork chops (about 1–1¼ inches thick)

  • 2 tablespoons olive oil

Honey Mustard Glaze

  • 2 tablespoons honey

  • 2 tablespoons yellow mustard

Instructions

Step 1: Prepare the Pork Chops

Remove the pork chops from the refrigerator 20–30 minutes before cooking to allow them to reach room temperature. Pat them dry thoroughly with paper towels.

Season both sides evenly with salt, black pepper, and paprika.

Step 2: Make the Glaze

In a small bowl, mix the honey and yellow mustard until smooth. Lightly brush the mixture over both sides of the pork chops. The coating should be thin, not thick.

Step 3: Pan-Sear the Pork Chops

Heat a heavy skillet (preferably cast iron) over medium-high heat. Add the olive oil and butter. Once the butter has melted and the pan is hot, place the pork chops into the skillet.

Cook without moving them for 4–5 minutes, allowing a deep golden crust to form. Flip the pork chops and cook the other side for another 4–5 minutes.

Step 4: Finish Cooking

Reduce heat to medium-low and continue cooking for 1–2 minutes per side, allowing the glaze to fully caramelize and the pork chops to cook through.

Remove from the skillet and let rest for 5 minutes before serving.
