Never Fail Fruit Cake

This Never Fail Fruit Cake is a moist, rich, and flavorful cake loaded with dried fruits and warm spices. Unlike traditional dry fruitcakes, this version is soft, tender, and easy to make, making it ideal for holidays, special occasions, or everyday dessert. The recipe is simple, reliable, and perfect for both beginners and experienced home bakers.

Ingredients

For the Cake:

  • 1½ cups (190 g) all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg (optional)

Wet Ingredients:

  • ½ cup (115 g) unsalted butter, melted and cooled

  • ¾ cup (150 g) brown sugar

  • 2 large eggs, room temperature

  • 1 teaspoon vanilla extract

  • ¾ cup (180 ml) milk

Fruit & Add-Ins:

  • 1 cup mixed dried fruit (raisins, cranberries, chopped dates, or similar)

  • ½ cup chopped nuts (optional)

  • ½ cup finely chopped candied fruit or fruit peel (optional)

Instructions

Prepare the Oven and Pan

Preheat the oven to 350°F (180°C). Grease and lightly flour a round or loaf baking pan.

Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Prepare the Wet Mixture

In a large bowl, mix the melted butter and brown sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine and Add Fruit

Add the dry ingredients to the wet mixture gradually, alternating with the milk. Mix gently until just combined.

Fold in the dried fruit, nuts, and candied fruit evenly throughout the batter.

Bake

Pour the batter into the prepared pan and smooth the top.

Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve

Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
