Lemon Cake Recipe
If you’re looking for a light, fluffy, and refreshing dessert with a zesty lemon flavor, this Lemon Cake recipe is the perfect choice!
It’s easy to make, smells amazing, and works great for any occasion — from cozy afternoons with tea to family celebrations.
Ingredients for the Cake
•200g sugar
•1 tablespoon grated lemon zest
•110g unsalted butter, softened at room temperature
•1 teaspoon vanilla extract (or vanilla sugar)
•2 tablespoons (30ml) vegetable oil
•30ml fresh lemon juice
•3 eggs
•200g flour
•15g baking powder
•150ml warm (almost hot) milk
Ingredients for the Icing / Frosting
•100ml sweet whipping cream
•30g cream cheese
•2 tablespoons lemon juice
•1 tablespoon lemon zest
•20g powdered sugar (optional)

Step-by-Step Instructions
1. Prepare the batter
In a large mixing bowl, combine sugar and lemon zest. Mix well so the lemon aroma infuses the sugar.
Add the softened butter and beat until the mixture becomes creamy and smooth.
Add vanilla extract and vegetable oil, mixing again until fully combined.
Next, pour in the lemon juice and eggs, one at a time, whisking continuously.
2. Add the dry ingredients
Gradually add the flour and baking powder (sifted beforehand) into the wet mixture.
Mix slowly until you get a thick, creamy batter.
3. Add the milk
Finally, pour in the warm milk and mix with a whisk until the batter becomes soft, smooth, and lump-free.
Baking the Cake
Grease your baking pan with butter and pour in the prepared batter.
Bake in a preheated oven at 160°C (320°F) for 50–60 minutes, checking occasionally with a toothpick.
If the toothpick comes out clean, your cake is ready.
Optional: After baking, drizzle a bit of lemon juice on top for extra flavor (or skip it for a milder taste).
Cooling and Frosting
Let the cake cool completely for 1–2 hours.
Meanwhile, prepare the lemon frosting: whip together the cream, cream cheese, lemon juice, lemon zest, and powdered sugar (if desired).
Once the cake is fully cooled, spread the frosting evenly on top.
Serving and Storage
For a fresh, elegant touch, decorate with two thin lemon slices on top.
Store in the refrigerator for a few hours before serving to enhance flavor and texture.
Extra Tips:
•Don’t overmix the batter — this keeps the cake light and fluffy.
•You can replace vegetable oil with mild olive oil for a richer taste.
•For a lighter version, use cane sugar or whole wheat flour.
