Crock Pot Chicken and Dumplings

Crock Pot Chicken and Dumplings is one of the most comforting classic meals you can make at home. It’s warm, creamy, hearty, and packed with tender shredded chicken, soft vegetables, and fluffy dumplings that cook right in the slow cooker. This recipe is perfect for busy days, cool weather, or anytime you want a home-cooked dish that feels soothing and nostalgic.

The slow cooker does most of the work, allowing all the flavors to blend together beautifully while the dumplings rise and become soft and pillowy. Below is a detailed, step-by-step version of this delicious dish.

Ingredients:
For the Chicken Base

2 lbs (900 g) boneless, skinless chicken breasts or thighs

1 medium onion, chopped

3 medium carrots, sliced

3 celery stalks, sliced

3 cups chicken broth

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried parsley

1 can (10.5 oz) cream of chicken soup

2 tablespoons butter

For the Dumplings

(The classic quick crock pot version)

1 can refrigerated biscuit dough

1 tablespoon all-purpose flour (optional, for thickening)

Instructions:
Step 1: Prepare the Crock Pot

Add the chopped onion, carrots, and celery to the bottom of the slow cooker.

These vegetables form a flavorful base and soften perfectly as they cook.

Step 2: Add Chicken and Seasonings

Place the chicken breasts or thighs directly on top of the vegetables.

Season with salt, pepper, garlic powder, onion powder, thyme, and parsley.

These spices give the dish a rich, comforting aroma.

Step 3: Add Broth and Soup

Pour the chicken broth evenly over the ingredients.

Add the cream of chicken soup and gently spread it.

Place 2 tablespoons of butter on top for extra creaminess and flavor.

Step 4: Slow Cook

Cook on Low for 6–7 hours or High for 3–4 hours, until the chicken becomes tender and easy to shred.

Slow cooking allows the broth, vegetables, and seasonings to blend into a thick, comforting mixture.

Step 5: Shred the Chicken

Remove the cooked chicken from the crock pot.

Shred it using two forks until it becomes soft and stringy.

Return the shredded chicken to the pot and stir everything together.

This step ensures every bite has tender chicken evenly distributed.

Step 6: Prepare the Dumplings

Open the can of biscuit dough.

Cut each biscuit into 4–6 small pieces.

Toss them in a little flour to prevent sticking and help thicken the broth.

Step 7: Add Dumplings to the Crock Pot

Drop the biscuit pieces on top of the chicken mixture.

Spread them out but do not stir them deep into the mixture.

Cover and cook on High for 1 hour, without lifting the lid.

Important: Opening the lid releases heat and prevents the dumplings from rising properly.

Step 8: Serve

Once the dumplings are fluffy and cooked through, the dish is ready.
The consistency should be:

Thick and creamy

Full of tender shredded chicken

Dumplings soft, pillowy, and slightly chewy

Serve warm for a cozy, satisfying meal.
