This is a great recipe for a cozy family dinner, a potluck, or even meal prepping — you can assemble it ahead of time and bake when ready!
Ingredients:
For the stuffed shells:
20–25 jumbo pasta shells
2 cups cooked, shredded chicken (boiled, grilled, or rotisserie)
1 cup cooked broccoli, finely chopped
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg
Salt & black pepper to taste
Garlic powder or minced garlic (optional)
For the Alfredo sauce:
2 tablespoons butter
2 cloves garlic, minced
1 ½ cups heavy cream
3/4 cup grated Parmesan cheese
Salt & black pepper to taste
A pinch of nutmeg (optional)
Instructions:
Cook the pasta shells:
Boil the shells in salted water until al dente. Drain and rinse with cold water to prevent sticking.
Make the filling:
In a large bowl, mix the shredded chicken, chopped broccoli, ricotta, mozzarella, Parmesan, egg, garlic (if using), salt, and pepper. Stir until fully combined.
Prepare the Alfredo sauce:
In a saucepan, melt the butter and sauté the garlic until fragrant. Pour in the heavy cream and simmer for 3–4 minutes. Add Parmesan, salt, pepper, and nutmeg, stirring until smooth and slightly thickened.
Fill the shells:
Spoon the filling into each cooked shell.
Assemble and bake:
Spread a layer of Alfredo sauce on the bottom of a baking dish. Place the filled shells in the dish and cover with the remaining sauce. Sprinkle with extra cheese if desired.
Bake at 350°F (180°C) for 25–30 minutes, or until the dish is bubbly and lightly golden.
Tips:
Add sautéed mushrooms or spinach to the filling for more veggies.
Swap ricotta for cream cheese for a richer texture.
Top with breadcrumbs mixed with melted butter for a crispy topping.
