Scottish Tablet

Ingredients:

2 cups granulated sugar

1 cup sweetened condensed milk

1/2 cup unsalted butter

1/4 cup whole milk

1/2 teaspoon vanilla extract

Pinch of salt

 

 

Instructions:

Grease a square baking pan (8×8 inches) and line with parchment paper for easy removal of the tablet.

In a medium saucepan, combine the sugar, sweetened condensed milk, butter, whole milk, and salt. Stir over medium heat until the butter melts and the sugar dissolves.

Bring the mixture to a boil, stirring constantly. Once it starts to bubble, reduce the heat and simmer gently for 20-25 minutes. Stir frequently to prevent burning.

Once the mixture reaches a thick, caramel-like consistency (a candy thermometer should read about 238°F or 114°C), remove from heat. Stir in the vanilla extract.

Pour the hot mixture into the prepared baking pan and let it cool for about 15 minutes. Once it’s slightly firm but still warm, score the tablet into small squares using a knife.

Allow the tablet to cool completely at room temperature before breaking it into pieces along the scored lines.

Store in an airtight container for up to a week.
